Have friends or family coming over for a last minute dinner? This is the perfect tasty and simple recipe. It’s not too fishy. Your three year old niece Olive will even love it. Just tell her it’s chicken.
Ingredients:
4 frozen tilapia fillets
1/2 c balsamic vinegar
2 tbsp coconut butter
1 tsp ginger powder
2 tsp curry powder
- Thaw tilapia
- Cover in balsamic vinegar and spread coconut butter over the fillets
- Add spices
- Bake for 12-15 minutes at 350 or until Carmelites on the bottom and flaky on top
Total time for both prep and cooking is 20 minutes.
I served this dish just any other – over a bed of spinach.
