Spaghetti Squash


This is one of the most exciting vegetables that I’ve encountered thus far in my short cooking life.

It’s so independent. I cut the gourd. I set the oven, and it’s off. In 20-23 minutes it’s spaghettied itself.

I prepared it like spaghetti by replacing noodles with squash and placing it over a bed of baby spinach with pasta sauce and parmesan.

It’s good on its own. My second helping was sans pasta sauce.

There are so many options.

Next Time:

I’m going to stuff it.
