Homemade Pumpkin Pie – like with real pumpkins

I didn’t use pumpkin from a can y’all. I picked a pumpkin and turned into a pie. Yay.

Ingredients:
1 medium-sized pumpkin
2 tbsp coconut butter
1 tsp vanilla extract
1 1/2 tsp pumpkin pie spice or 1/4 tsp nutmeg 1/4 tsp ginger and 1/2 tsp cinnamon
1/4 c coconut milk

  • Cut the top off the pumpkin and pull the seeds out
  • Slice the pumpkin and clean remaining seeds and pulp off
  • Add coconut butter and roast for 45-60 minutes at 450 or until tender
  • Purée pumpkin and the rest of the ingredients together until smooth
  • Pour pumpkin filling into crust
  • Bake for 20-30 minutes until filling is solidified and crust is golden

Next Time:
I used a store-bought pie crust this time. Maybe for Thanksgiving I’ll go the whole way and make the crust from scratch too.
