I spent the final day of 2013 tucked up in a coffee shop pouring over the pages of the beautiful Kinfolk Table book. My roommate Sophie sat with me scribbling down recipes we wanted to try in our kitchen. I thought of Jana as soon as I saw the almond-coconut granola recipe & knew it was one I wanted to try. This year Soph and I are resolving to eat a better breakfast daily, so we spent our New Year’s Eve in the kitchen baking this homemade granola to ensure the first breakfast of 2014 was a good one. We served it with bananas and almond milk the next morning as a yummy cereal.
-Preheat oven to 300
-Combine oats, almonds, flax seeds, coconut & cinnamon in a large bowl
-Whisk honey, orange juice, oil & vanilla in a separate bowl
-Add oil mixture to oat mixture and stir until thoroughly combined
-Spread granola on a baking sheet
-Stir every 15 throughout baking process to make sure everything gets golden & crisp
Enjoy this with a cup of coffee or English breakfast tea to ensure a sweet start to your morning!
