Roasted Fennel Cannellini Bean Dip

I made this dip for Brenna‘s Oscars party last night. Yay Lupita! Check out some of the night’s highlights.

I didn’t really know what fennel and cannellini beans were to begin with, so let’s start off with some definitions.

Fennel – Google tells us it’s “an aromatic yellow-flowered European plant of the parsley family, with feathery leaves”

Cannellini – also known as navy beans or white kidney beans

Like the power green salad, I found this recipe on Sprouted Kitchen. Seriously check out their blog. It’s perfect.

Ingredients:

  • cannellini beans
  • garlic cloves
  • grape seed oil or olive oil
  • red pepper flakes
  • lemon juice
  • grated Parmesan
  • salt and pepper
  • rosemary

I really liked playing with new ingredients. Fennel is weird, but I liked it.

Oh, and I used the garlic/fennel/rosemary/olive oil remnants to bake eggs in for brunch. They were really yummy.
