I didn’t really know what fennel and cannellini beans were to begin with, so let’s start off with some definitions.
Fennel – Google tells us it’s “an aromatic yellow-flowered European plant of the parsley family, with feathery leaves”
Cannellini – also known as navy beans or white kidney beans
- cannellini beans
- garlic cloves
- grape seed oil or olive oil
- red pepper flakes
- lemon juice
- grated Parmesan
- salt and pepper
I really liked playing with new ingredients. Fennel is weird, but I liked it.
Oh, and I used the garlic/fennel/rosemary/olive oil remnants to bake eggs in for brunch. They were really yummy.
